This Pink Bourbon comes from smallholder farmers of the Naza We'sx Indigenous community in Gaitania, southern Tolima, Colombia. For the Naza community, coffee is more than a living. It reflects their culture, their collective work and a deep connection to the land, and it has become a symbol of resilience and peace in a region long affected by conflict.
The community's farms sit between 1,600 and 2,000 metres above sea level, and its members run the whole production cycle themselves. Many have trained in coffee processing, and their careful approach, from selective harvesting through to controlled fermentation, shows clearly in the cup.
This lot from the 2026 harvest is semi washed, with a 72 hour fermentation in sealed tanks before being dried using a mix of solar and mechanical drying. Expect bright red fruit and floral sweetness, with fresh strawberry, hibiscus and raspberry leading the way, and key lime pie and soft milk chocolate to follow.
